Huge, non-stick wok/steamer combo for medium or low heat only

This wok/steamer combo is a quality product that I can either use as a wok OR a steamer but not both at once. I steamed a lot of spinach in the steamer and since the steamer was large enough I was able to move the spinach around so that it steamed quickly (within 5 minutes after water was boiled) and it didn't wilt too much. I also used the wok to make the sitr-fried chili scallops with baby bok choy from this book Stir-Frying to the Sky's Edge: The Ultimate Guide to Mastery, with Authentic Recipes and Stories that I purchased specifically for this wok. This meal came out excellent even on the medium heat but I did have to add about 2 minutes to the cooking time and I used wooden instead of metal utensils so as not to scratch the non-stick coating.What I really like about this cookware is:- The pan is sturdy, non-stick, and cleans easily; similar to an expensive Calphalon pot I have.- The handles are short on both sides but are big enough to wrap all four fingers through them for an easy and safe grip (with gloves, of course). Most woks have a long pot-type handle which makes storing difficult; but not this wok.- The steamer is huge allowing lots of vegetables to be steamed at once. Since I'm a steamer fanatic, this is a definite plus to me. I'm going to try steaming 6 ears of corn next because my other steamers don't have the huge capacity of this one.- The base of the wok is tapered so that the entire base fits over the cooking flame.- I like that I can wash the pot when it's hot (it's actually recommended in the instructions). Inferior cookware warps if you do that.- Although the thin cloth bag ripped the first time I opened it, I still like that I can stack the pans together and enclose it in a bag for easier storage. I just put the wok inside the steamer and then turn the cover upside down on top of the wok (basically the way it was shipped) and cover it. In fact, I had this sitting on my table for a couple of weeks before I did my review until I had the time to cook in it and review the instructions. During that time, I left the cookware in the bag in its compact storage position and two of my four cats have been using it as a very comfortable bed by sleeping in the depression of the glass cover.Some concerns I have:- I can only use this on medium to low heat. However, because it's heavy gauge it retains heat well so this wasn't really an issue for me.- It's oven-safe up to 250 degrees Celsius only; so I can't use it for anything but warming something in the oven.- The pan is huge and because the wok flares out, I was not able to use the back burner on my stove at the same time. To get an idea of how it flares out, think of how it would be if you put the base or neck end of a large Elizabethan collar (the type that vets use around the neck of injured large dogs) on the stove.- I don't use my dishwasher but if I did this pan, steamer, and cover would take up most of the dishwasher with little room to spare. Also the care instructions recommend against dishwashing because after 200 cycles the surface may be damaged.- I wish they supplied a stronger storage bag because the one I got ripped easily. Also such a quality piece of cookware deserves a stronger cover.Overall I think this is an excellent, sturdy wok/steamer combo that has many uses. However, according to the the book I mentioned above, a traditional wok is a flat-bottomed carbon-steel pan for use at high temperatures which this is not. In addition, you can get a good carbon-steel alloy wok for around $30--of course, without any steamer or cover.So in my opinion, as long as you don't care about having a traditional wok, have room to store this huge pan, don't care about cooking on medium to low heat, or mind washing this by hand and love having a large steaming capacity as well then this will be a great addition to the appropriate cook's kitchen. I know that I'm very happy to have picked this as a product to review and as a bonus it serves as a spare bed for my cats if I leave it within their reach.September 18, 2011 Update - I used this to steam 6 corn on the cob and 4 small to medium size whole beets for 40 minutes over boiling water. There was still room for about four more beets. The vegetables came out great. This steamer has the largest steaming capacity of any of the 3 electric steamers I own. From a steaming capacity perspective, this steamer is five stars.

Looks as if it will last for decades

This super heavy wok-steamer combo is designed to last for a very long time. The quality construction (it looked and felt like my Calphalon pans) is obvious, as is the versatility. Another reviewer mentioned some nicks and flaws in the base of her wok, but mine arrived in pristine condition.If you love to make dim sum, or steamed veggies, the steamer capacity is enormous. You could probably steam a whole fish with no trouble. For those who like to make steamed puddings, there is more room than I have ever seen on any steamer, period. Ditto, the wok. Outside of a busy Asian restaurant, I have not seen many woks of this diameter (14"). While that's fantastic if you are cooking for a crowd, it's also helpful if you're cooking for one and want leftovers. Also, with more surface area your food can spread out and cook faster.I am a big fan of tempered glass covers, and this one gives you a full view of everything you're cooking.One big caveat: the instructions are very clear about using low to medium heat as the design and conductivity of the wok is specifically meant for those temperatures. If you are used to using a different type of wok, this will be counter-intuitive because you typically use very high heat. Stick with their instructions, as using high heat invalidates the warranty.The fabric bag they include is attractive, and useful for keeping your wok scratch-free.

My orange chicken recipe has finally found a home

I have a few Asian recipes we cook for our family several times a month. If you have not cooked with a wok, it is the only way to go. Combine that with the steamer function of this pan and you've got an awesome dinner no matter how you cooked it.I don't know a thing about the brand "The Chef's Toolbox" but I can tell you this much. This pan is so well made that it looks like you could keep pass it down as a dang heirloom! We use this thing all of the time and it still looks new after washing. (We hand wash it). The quality of construction is something like you would find at high end epicurean stores.This pan heats up quickly and heats EVENLY... which is great. No burnt food due to hot spots from those cheap pans. I will mention this pan is pretty large. We had to clear out a nice sized spot for it and put other stuff in it to fit our storage area. But size aside, it is the best pan I've ever used. My next pan purchase will start with a search for this brand as I'm completely impressed.Something odd and confusing I found in the instructions was the part to not 'over heat' the pan. Huh? Just enjoy your perfectly cooked meals, hand wash it, and you'll be fine.Outstanding pan!
